Sweet Potatoes (peeled and thinly sliced) 2 pounds
Water 3.5 cups
Sugar 1.5 cups
Butter (cubed) 3/4 cups
All-Purpose Flour 3 tablespoons
Ground Cinnamon 1/2 teaspoon
Ground Nutmeg 1/4 teaspoon
Salt 1/4 teaspoon
Cobbler Topping:
All-Purpose Flour 2 cups
Shortening 2/3 cups
Salt 1/8 teaspoon
Cold Water 5 tablespoons
Butter (melted) 2 tablespoons
Sugar 4 teaspoons
Preheat Oven: Preheat your oven to 400°F.
Prepare Sweet Potatoes: In a large saucepan, combine thinly sliced sweet potatoes and water. Cook until tender (about 15 minutes). Drain, reserving 1.5 cups of cooking liquid. Layer sweet potatoes into a greased 9×13 casserole dish.
Create Spice Blend: In a separate bowl, mix sugar, all-purpose flour, ground cinnamon, ground nutmeg, and salt. Sprinkle this blend over the cooked sweet potatoes in the baking dish.
Add Liquid and Butter: Pour the reserved cooking liquid over the sweet potatoes. Add cubed butter evenly across the mixture.
Prepare Pastry: In a mixing bowl, combine all-purpose flour, shortening, and salt. Cut until the mixture resembles coarse crumbs. Gradually add cold water, tossing with a fork until a dough forms.
Roll Out Pastry: Roll out the pastry dough to fit the top of your baking dish. Place it over the sweet potato mixture, sealing the edges.
Brush with Butter and Sugar: Brush the pastry with melted butter and sprinkle with sugar.
Bake to Perfection: Bake in the preheated oven for 30-35 minutes or until the top is golden brown, and the filling is bubbly.
