Lemon Blueberry Bread


Melted butter 1/3 cup
Sugar 1 cup
Lemon juice 3 tbsp
Eggs 2
All-purpose flour 1 1/2 cups
Baking powder 1 tsp
Salt 1 tsp
Milk 1/2 cup
Grated lemon zest 2 tbsp
Chopped walnuts (optional) 1/2 cup
Fresh or frozen blueberries 1 cup


  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, beat together melted butter, sugar, lemon juice, and eggs until well combined.
  3. In a separate bowl, combine all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the egg mixture, alternating with the addition of milk.
  4. Fold in grated lemon zest, chopped walnuts (if using), and blueberries. Ensure even distribution of blueberries throughout the batter.
  5. Pour the batter into the greased loaf pan, spreading it evenly.
  6. Bake in the preheated oven for 60 to 70 minutes or until a toothpick inserted into the center comes out clean.
  7. While the bread is baking, prepare the glaze by combining lemon juice, melted butter, and confectioners sugar. Mix well until smooth.
  8. Once the bread is baked, remove it from the oven and let it cool for a few minutes.
  9. Drizzle the prepared glaze over the warm bread, ensuring it covers the entire surface.
  10. Allow the glazed bread to cool completely before slicing.
